Barbadillo sherry

Known as The Cathedral at the Barbadillo sherry house the size is all to do with maturing the sherry, ;etting in the sea breezes and controlling the temperature.









Ah, The tasting! plud some VORS which our guide produced from a brown paper bag and said it wasn't really for tourists!







The barrel which is perspex at both ends to demonstrate how the yeast floats on the top making an airtight seal and the sediment settles to the bottom only in this case the barrel has just been cleaned and re filled so there is no sediment!






And finaly maturing sherry, the arrows on the end barrel demonstrate how many rows of the same variety of sherry are stored.
